Mini Lobster Rolls.

Both cute and tasty, it's hard to go wrong with mini lobster rolls. I ate about a half a dozen or so while in New York and have craving them ever since.

Ingredients:

1/2 pound cooked chopped lobster

1/2 pound cooked chopped shrimp

1 cup shredded lettuce

1/2 cup mayonnaise

1 tablespoon fresh lemon juice

1 tablespoon chopped fresh dill

2 teaspoons chopped fresh chives

1/2 teaspoon grated lemon zest

24 small soft dinner rolls

1/4 salt

1/4 fresh pepper

Directions: Stir together all ingredients with salt and pepper and chill, covered, until ready to serve. Cut down into tops of rolls to split them (not cutting all the way through), add lettuce and fill each with 1 tablespoon of seafood.

Three Things.

This past weekend one of my dearest friends got married and was every bit the glowing bride I expected her to be - absolutely stunning. Although the weekend went by in a flash, I found a few special moments that will forever be mine.

1. Celebrating the lovely bride & groom

2. Some beach time with my baby

3. Knowing that I have someone who cares about me as much as I do them.

The energy in the room at the Joanna Mastroianni show was contagious. My jaw hit the floor when I saw this dress come down the runway and those shoes - to die for.

With an impeccable attention to detail, fun pops of color and sexy Lucite heels, Mathieu Mirano has a bright future ahead of him. Definitely a name to look out for.
